The pressing of the grapes takes place the same day as the grapes are harvested. Only the must from the first pressing (La Cuvée) is used to Domaine Collets champagne. The must from the best grapes is selected to be part of the wines of Anthime-series. Domaine Collet owns 15 different vineyards and grapes from each of these vineyards are pressed and vinified separately in the stainless steel tanks or the oak barrels. To get as mineral and fresh wines as possible; malolactic fermentation is only carried out in parts of the wines that are fermented in the steel tanks and is stopped in the wines fermented in the oak barrels. Nearly a third of the harvest is fermented and aged in the oak barrels. Oak barrels are purchased from coopers in Champagne, Burgundy and Cognac. About half of the wines that has been fermented in the steel tanks and all of the wines that has been fermented in the oak barrels are used for the reserve wine. More than 40 different wines from the barrels and the stainless steel tanks are tested during the process of blending.

Domaine Collet produces champagne for two different series; Champagne René Collet and Champagne Anthime. The Champagne René Collet series, a traditional vinification takes place and the focus is on wines with high drinkability and enjoyment right from the start. There are 8 different wines under the series and the annual output amounts to 42,500 bottles/year. The Champagne Anthime series, two different wines are produced and the production is 2,500 bottles/year. Both vinification and aging are done in 300 liter oak barrels.
